I am a huge fan of cookies! These vegan, gluten-free cookies are made with healthy teff flour, peanut butter and coconut sugar. I make them quite often, as they are easy to make and very delicious. For extra health benefits I use coconut sugar and coconut oil in my teff cookies, but you may use any kind of sugar (e.g. xylitol works too) or vegetable oil.
These teff cookies are quite helpful for my purposes, as they are high in amino acids, protein, fiber, iron and calcium, and have a low glycemic index. The best thing is that these cookies are so fast and easy to make! So these nutrient-dense little wonder-cookies are perfect to support energy levels – the perfect snack on long, stressful days, which in my case usually come along with a cookie and peanut butter craving, and not too much time to think about recipes or bake something I’ve never tested before. Is it just me or is it really frustrating to try a new recipe that does not seem to work? Anyway, nothing to worry here: I can guarantee that this recipe works really well!
