  1. Preheat oven to 375° F (190°C) and line a baking sheet with parchment paper.
  2. In a large bowl, mix flour, cocoa powder and baking powder.
  3. In a separate bowl, cream together vegan butter or margarine, sugar and vanilla extract. Mix in non-dairy milk.
  4. Add the flour mixture to the wet ingredients and mix.
  5. For the filling, mix confectioner’s sugar and peanut butter until smooth and creamy.
  6. To form the cookies, take about 2-3 tablespoons of chocolate dough and roll into a ball. Flatten the ball on parchment paper to form a disk and place about 1 teaspoon of the filling in the centre. Fold the edges of the disk around the filling, roll into a ball and flatten again on parchment paper.
  7. Bake the cookies for about 12 minutes.
