
Quick and easy, vegan, gluten-free Hand Pies – the best ever!
THE last minute treat for Valentine’s Day :). At least if you haven’t prepared something yet. So, here’s a very quick and easy recipe for heart shaped hand pies that are just perfect for Valentine’s Day. Or any other occasion – no need for a heart shape ;)!
Well … not much to say to this recipe. To make it even simpler, just use your favourite vegan & gluten-free pie crust (or use the recipe for the pie crust below), cut out heart shapes (or simple squares), place your favourite jam or jelly in the middle and seal your hand pies. Bake, optionally dust with confectioner’s sugar and enjoy! That easy and simple :)! You can make this recipe with sugar-free jam or jelly and you may also add some vegan cream cheese to the jelly filling. I used cherry jam sweetened with xylitol.
- 1/2 cup (115 g) vegan butter or margarine
- 2/3 cup (75 g) millet flour
- 1/3 cup (40 g) tapioca starch
- 1/4 cup (33 g) brown rice flour
- 1 tsp apple cider vinegar
- 2/3 tsp xanthan gum
- 3 Tbsp water , cold
- 1 Tbsp sugar (optional)
- 6-10 Tbsp jam or jelly of choice
- confectioner's sugar for dusting the pies
- In a large bowl, mix together the flours, xanthan gum and optionally sugar.
- Cut in the vegan butter or margarine and mix until the mixture is very crumbly.
- Add in apple cider vinegar and water and combine everything to a smooth dough.
- Preheat oven to 375 °F (190°C) and line a baking sheet with parchment paper.
- Roll out the dough on parchment paper and cut out heart shapes (or any other shapes).
- Put about 1 tsp - 1 Tbsp (depending on size of your pies) of jam in the middle of half of your cut out shapes, leaving an edge of about 1/2 inch.
- Place the remaining cut out shapes on top of the filled halves and seal the edges with a fork.
- Bake for about 25 minutes, until golden brown.
- Optionally dust with confectioner's sugar and enjoy :)!
