
Vegan, gluten- and yeast-free Cinnamon Roll Bunnies for Easter.
I haven’t eaten cinnamon rolls for … well … I have never tried some before. Anyway, this is what I baked this Easter. I shaped them into some bunny-like form (at least I tried) and put some chocolate drops for the eyes and nose on them. My cute little, sweet bunnies :).
They tasted really really good. I have tried to put some raisins on the bunnies for the eyes and nose – don’t do that, they’ll burn in the oven. Chocolate eyes and noses are perfect. I used a nice self-made flour mix. You may use this mix or your own. Be sure to adjust the amount of liquid in your dough when using a different flour mix. I actually substituted the sugar with xylitol (and also used a substitute for brown sugar based on xylitol), which made my filling a bit darker than usual. So it will work with xylitol, although I would recommend using normal sugar. With normal sugar your version will look definitely better than my attempt, I’m sure! You may also like to put some frosting on the cinnamon rolls.
- 1 cup (100 g) brown rice flour
- 1 cup (100 g) millet flour
- 1/2 cup (75 g) potato starch
- 1/2 cup (75 g) tapioca starch
- 2 tsp xanthan gum
- 3 Tbsp sugar
- 2 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp salt
- 4 Tbsp (60 g) margarine , vegan
- 1/2 tsp apple cider vinegar or lemon juice
- 1 1/2 cup (275 ml) non-dairy milk
- 2 Tbsp margarine , vegan
- 3 Tbsp brown sugar
- 2 tsp cinnamon to taste

- Preheat oven to 375°F (190°C) and line two baking sheets with parchment paper.
- In a large bowl, mix dry ingredients for the dough.
- Add softened margarine to the flour mix and mix well.
- In a separate bowl, mix milk and apple cider vinegar (or lemon juice).
- Add milk mix to the flour mix and mix until just combined.
- On a floured surface, roll out dough into a thin rectangle (I roll it out on floured parchment paper). Brush with 2 Tbsp melted margarine and top with sugar and cinnamon.
- Starting at one end, tightly roll up the dough and cut it into 1.5 - 2 inch sections.
- Place the rolls on the prepared baking sheet. Unroll half of the rolls to form bunny ears for the other halt of the rolls. Place chocolate chips for the eyes and nose on each bunny.
- Bake for about 20 minutes, until golden brown.
- Optional: Frost bunnies with vegan frosting of choice.
