
Vegan, gluten-free Chocolate Cookies stuffed with peanut butter, or simply Chocolate Peanut Butter Stuffed Cookies – crispy outside and creamy inside – Nothing is better ;)!
Had lots of Christmas cookies in the last days – I loved it :). Stuffed cookies are one of my favourites. I usually like the ones with jelly. Today I decided to make some peanut butter stuffed cookies. They turned out great! I could even use my cookie stamp(s) for them. But no need for a cookie stamp in general. And no need to fill the cookies before baking – just fill the baked cookies with peanut butter, if you prefer! You may also add some jelly – whatever you like :)!

- 1/2 cup (64 g) confectioner's sugar
- 1/2 cup (125 g) peanut butter
- Preheat oven to 375° F (190°C) and line a baking sheet with parchment paper.
- In a large bowl, mix flour, cocoa powder and baking powder.
- In a separate bowl, cream together vegan butter or margarine, sugar and vanilla extract. Mix in non-dairy milk.
- Add the flour mixture to the wet ingredients and mix.
- For the filling, mix confectioner's sugar and peanut butter until smooth and creamy.
- To form the cookies, take about 2-3 tablespoons of chocolate dough and roll into a ball. Flatten the ball on parchment paper to form a disk and place about 1 teaspoon of the filling in the centre. Fold the edges of the disk around the filling, roll into a ball and flatten again on parchment paper.
- Bake the cookies for about 12 minutes.
