Chocolate Peanut Butter Fudge

Easy, vegan chocolate peanut butter fudge that will melt in your mouth!

The first fudge I have made in my life – yes, I definitely missed something in all those fudge-free years ;). Ok, so here we have a very delicious chocolate-topped-with-peanut-butter-fudge-thingy-recip. Those expressions happen when I had too much sugar ;). But I have also tested a completely sugar-free version of this recipe with xylitol only – works well, but has this cold, xylitol-like mouthfeeling and makes a more crumbly chocolate layer. Probably not what you want, but it’s up to you! I wonder if a xylitol fudge would be a good substitute for brushing your teeth … lol … ok, my weird thoughts again :). Vegan Chocolate Peanut Butter Fudge

Anyway, this recipe is relatively easy and quick. Although, of course, the time the fudge needs to cool is waaaay to long ;). As this was my first fudge, I had some problems with cutting it, as you can see on the pictures. It took me a while to find out which type of knife is best suited. I originally planned to sprinkle some peanuts on top (in addition to chocolate chips), but was so excited that I forgot those peanuts completely. But you can add some, if your brain is still working when smelling the incredibly delicious, mouth-watering peanut fudge ;).

For the Chocolate Fudge
  1. Line a 8 x 4 inch loaf pan (or similar) with parchment paper and set aside.
  2. Place chocolate chips in a small bowl and set aside.
  3. In a small saucepan, heat the coconut milk with butter, sugar and vanilla and heat until the sugar has dissolved. Immediately pour over the chocolate chips and let stand covered for a few minutes.
  4. Stir gently until completely smooth, pour into the prepared loaf and place in the refrigerator.
For the Peanut Butter Fudge
  1. In a small saucepan, heat the vegan butter, peanut butter, coconut milk, brown sugar and sugar until the sugar has dissolved.
  2. Pour over the chocolate fudge and spread evenly.
  3. Top with chocolate chips and/or peanuts and place in the fridge for at least two hours.
  4. Cut into squares and store in the fridge.
