Chocolate Covered Peanuts – Today is National Chocolate Covered Nuts Day, so what else could I be making? … here a really easy recipe for chocolate covered peanuts. Just use your favourite type of vegan chocolate, melt it, stir in peanuts and drop spoonfuls of the mixture on parchment or wax paper and you have some really nice and absolutely delicious sweet treats :). I love these! … only that I’m allergic to nuts in general, so it’s nothing I can eat every day, although I would like to.
I used chocolate sweetened with xylitol, so mine were sugar-free and very healthy (at least for someone who isn’t allergic to nuts). IÂ also added some salt to the mixture which gives it a very interesting taste, and drizzled some vegan white chocolate over some of my peanuts too … looks quite nice :).
- Melt chocolate in double boiler or according to package directions.
- Stir in the peanuts until coated.
- Drop by tablespoon full onto parchment or wax paper and allow to cool completely.
- Store in airtight container.
