
Healthy, vegan, low-fat, low-carb Chickpea Pancakes made with chickpea flour.
Pancakes made with chickpea flour are my favourites: quick and easy! I use to fill them with salad, avocado and some dip, usually tzatziki (recipe will follow soon), but they are also delicious eaten by themselves. In my opinion, it’s good to add some herbs and spices to the batter, since otherwise the bean flavour of the chickpeas might be too dominant – but this depends on the brand of flour used and your personal taste.
Chickpea flour, also called besan or garbanzo bean flour, is naturally gluten free and high in protein, fibre and nutritive values. It may help with weight loss, controlling diabetes, improving heart health, but also with lowering the glycemic index. Being an anti-inflammatory food, chickpea flour may further protect against cancer within the digestive tract and improves immune function.
- Mix all ingredients and whisk to get a smooth consistency. Leave the dough to rest for about 15-30 minutes.
- Heat a skillet over medium heat and drizzle a few drops of oil on the skillet.
- Bake pancakes, one at a time. Serve with salad or vegetables and some dip.
