
THE vegan, gluten-free dessert or cake with the funny name “Better than Robert Redford”. It’s also known as “Better than Sex Dessert” or “Sex in a Pan”.
Although not sure why it is called this way (can anyone tell me, please?), this is my absolute favourite dessert. And it’s not a problem at all to veganize it. Just sub every non-vegan ingredient with the vegan version and voilà – vegan “Better than Robert Redford” ;). To be more specific, the crust is just chopped pecans, vegan butter and (gluten-free) flour and the different layers are vegan cream cheese + vegan whipped cream, vegan chocolate pudding, vegan vanilla pudding, all topped with vegan whipped cream, along with chopped nuts and/or chocolate shavings or sprinkles.
I use to cook the puddings myself – no need for instant puddings, but you can use these if you are short of time (although the consistency might be too liquid for a stable Robert Redford Dessert). Go for a good quality vegan cream cheese and whipped cream. In principle, every ingredient and every layer should taste increadibly good on its own and then … well, then the combination is outstanding :D!!! You’ll never want another dessert. At least that’s what happened to me ;). You can also make it sugar-free. Xylitol and/or Erythritol (or something else) work well in this recipe.
- 1/2 cup (~100 g) vegan butter
- 1 cup (~150 g) all-purpose flour , gluten-free
- 1 cup (~100 g) pecans , finely chopped
- 1 1/2 cup (~100 g) confectioner's sugar
- 10 ounces (~280 g) vegan cream cheese , softened
- 2 cup (~250 ml) vegan whipped cream
- 2 cups (~500 ml) chocolate pudding , vegan
- 2 cup (~500 ml) vanilla pudding , vegan
- Preheat oven to 350°F (175°C) and grease a 9x13 inch (or similar) baking dish.
- In a medium sized bowl, mix flour, butter and nuts.
- Pat into prepared dish and bake for about 10-15 minutes.
- Remove crust from oven and let cool completely.
- In a bowl, beat cream cheese and sugar untol smooth. Fold in half of the whipped cream and spread the mixture over the cooled crust.
- Carfully spread chocolate pudding over the cream cheese layer.
- Spread vanilla pudding over the chocolate pudding layer and top with the remaining whipped cream.
- Refrigerate for at least about 2 hours.
- Sprinkle with chocolate shavings and/or chopped nuts. Cut in squares, serve and enjoy :).
