
What is better than vegan ice cream? Today I share a recipe for vegan, gluten-free Banana Peanut Butter Popsicles covered with chocolate and sprinkled with chopped peanuts.
We all know vegan “nice cream”, i.e. pureed frozen fruits, with some optional add-ins. This recipe is quite similar but you don’t need frozen bananas and can prepare the popsicles well in advance. In this way, you can save a nice depot of these little treats in your freezer. Perfect for summer, when the usual nice cream melts away too fast, or when you don’t have a high-speed blender that is powerful enough to blend frozen bananas.
For the Banana Peanut Butter Popsicles, you only need to blend all ingredients in a blender or food processor and fill the mixture into popsicle moulds – done! That easy – can you believe it? Of course, in my opinion the best is the chocolate shell, so you may want to to try this. For the shell I roasted some peanuts and chopped them and melted some chocolate along with a bit of canola oil (you may want to use coconut here, but I’m allergic to coconuts). You have the option of dipping the popsicles into chocolate and then into the chopped peanuts or mix the peanuts with the melted chocolate before coating the popsicles. You may use salted or unsalted peanuts – whatever you like better. I used unsalted.
Coating the popsicles may take some practice. The chocolate hardens really quickly so if you want to sprinkle chopped nuts on top, you must hurry! I personally prefer to mix the nuts into the chocolate before dipping the popsicles. You should try both versions and see which one you like better :). In any case, this is my new favourite popsicle recipe!!! I need to make more of these … maybe I’ll try them with yoghurt next :).

- 2 bananas , overripe
- 1 cup non-dairy milk
- 1/2 cup peanut butter
- 3 Tbsp sugar , or sweetener of choice
- 1 tsp vanilla extract
- 1/2 tsp salt (optional)
- 3/4 cup chocolate chips , vegan
- 3 Tbsp vegetable oil
- 1/2 cup peanuts , roasted, chopped
- Place bananas, milk, peanut butter, sugar, vanilla and salt in a blender or food processor and blend until creamy.
- Pour into popsicle moulds and place in freezer.
- Once frozen (after about 12-24 hours), remove from moulds.
- Melt chocolate and oil in a water bath. Coat the popsicles with chocolate and sprinkle with peanuts immediately OR mix peanuts into the chocolate before coating the popsicles.
- Place chocolate covered popsicles on parchment paper and freeze again in a sealed container until ready to eat.
