
3-Inredient Banana Oat Thumbprint Cookies – The easiest, quickest, healthiest thumbprint cookies ever! No fat, no sugar added – real brain food :). I use to make (and eat) these whenever I am not allowed to eat sugar and/or fat for health purposes. They are a particularly helpful source of energy during exam preparations and things like that, as they really help with staying concentrated and motivated.
Note that this recipe is very versatile: You can fill your banana-oat cookies with any jam you like or even with some chocolate or nut spread. But there is actually no need to fill them at all: just spoon the banana-oat-mixture onto the baking sheet and your cookies will come out delicious with or without a filling. You can also add chopped nuts, seeds, dried fruit, protein powder and/or chocolate to the mix – whatever you like. Ideas are welcome here.

- 2 ripe bananas , mashed
- 125 g (~1.5 cups) rolled oats , gluten-free
- jam of your choice (sugar-free)
- Preheat oven to 350°F or 175°C and line a baking sheet with parchment paper.
- In a large bowl, combine mashed bananas with oats and mix well.
- Scoop the mixture onto the prepared baking sheet with a spoon and make an indentation in the centre of each cookie.
- Fill about 1/4 to 1/2 tsp of jam into each indentation.
- Bake for about 15-20 minutes or until golden brown.
